Texturally creamy and very tight, with delicate sauvignon blanc flavours that duck and dive between the bubbles of fine bead. This has green apple, crushed oyster shell and chalky phenolics, all of which serve to highlight the lemon pith and wet steel on the finish. Very fresh for the 5 years it has under its belt, in another five, the fruit will have receded in order to make way for the gentle spice and talcy texture that will no doubt emerge. Soft and very pretty now, with no shortage of race and pace in the mouth.
100% Sauvignon Blanc from our dry-grown organic, biodynamic vineyard. Picked on the earlier side of fully ripe with the intention of harnessing as much natural acidity as possible, the wine then spends 60 months on lees to build textural complexity and depth of flavour.Â
