AROMATICS
Plum pudding, black cherry, cocoa, coffee and vanilla pod aromatics engulf the senses.
PALATE
Flavours of concentrated blackberry sorbet and maraschino cherry are prominent on the palate. Supple tannins and bright acidity support the vibrant fruit flavours and lingering oak spice.
OAK MATURATION
25% new French oak barrels and 20% new French oak staves in tank.

WINEMAKING
The malbec batch came in clean and vibrant on the 26th March with analytical specs of 14.4 °Be, 7.6 g/L TA and 3.49 ph. The Malbec was hand harvested in the cool of the early morning and crushed to static fermenters. Colour and phenolics were gently extracted using aerate and closed pump over techniques. The batch was co-inoculated for MLF and pressed off skins at or around 0°Be. Once primary fermentation and MLF were completed in tank the wine was transferred to a mixture of new and old French oak barrels and a stainless-s steel tank with French oak staves for 16 months maturation.
VINTAGE 2019
Harvest amazingly began on the same day as 2018, “Valentine’s day,”. Further Chardonnay harvests followed through the later stages of February until a white grape avalanche rolled through with the Sauvignon Blanc and Semillon coming in hard and fast through early to mid-March trying to beat rainfall events. The weather was testing through April; cooler with some more rainfall events. Red harvest commenced with the Malbec & Shiraz coming off bright and aromatic in late March – early April, followed by the Merlot and Cabernet Sauvignon batches through to late April showing great intensity. Driftwood’s last harvest was 25th April, a homage to ANZAC day and finally the celebrations could begin.
