The Shiraz was dry grown and only received sulphur sprays during the growing season. The hot 2020 vintage created small, compact bunches with a deep concentration of flavour.
The fruit was handled gently in the winery, crushed to open fermenters and hand plunged twice daily. After 21 days of skins, the wine was basket pressed to combination of stainless and oak, with 30% being new American oak.
The resulting wine is a full-bodied expression of Shiraz, that is true to the vineyard and growing season. Black ink in colour, the wine offers traditional aromas of black olive tapenade, plum, dried herbs and some sweetness from the oak. On the palate the tannins are firm, but chewy and offers generous mouth feel and length.
